I had a whole bunch of leftover zuccini and squash, some chicken and decided to make soup. This is a great soup, good for lunch, to take to work, to have for dinner (maybe add quesadillas?) Anyway, its easy and pretty inexpensive to make 🙂
1-store bought rotisserie chicken (Costco is excellent 🙂 ) – shredded
3 or 4-green zuccini, diced
3-yellow squash, diced
1-15oz can of diced tomatoes (any flavor will do)
2 potatoes, diced
1/2 bag mini carrots roughly chopped
2-48 cartons of chicken broth (you can use chicken bouillon with water too)
1/2 – large onion, diced
1 tbsp. salt
1 tbsp. pepper
1 tbsp. chili powder
1 tbsp. cumin
1 tbsp. garlic powder
1 bay leaf
Shred chicken and put aside, in a large pot heat oil over medium heat and toss in the onion, once they turn translucent add the salt, pepper, chili powder, cumin and garlic powder, stir gently. Add zucchini, carrots, yellow squash and tomatos, and potatoes, cook for 5 minutes stirring occasionally. Add chicken broth and bay leaf, simmer uncovered for 20 to 30 miutes or until potatoes are fork tender and add chicken. salt and pepper as needed!
Garnish with avocado, cheese and chips and you are all set!
Leftovers can be frozen too!
